Slow Cooker Chicken and Wild Rice Soup


I adore my slow cooker. I call him Horatio and we are in love. Well, I’m not quite sure how he feels about me, but I really do love him. Even my hubby loves him. He saves us so much time and makes fabulous meals like this warm, hearty soup. What else can we ask for in an inanimate object?

Slow Cooker Chicken and Wild Rice Soup

Serves 6
Prep Time 15 minutes
Cook Time 5 hours


3/4 cup Wild Rice
1 lb. Chicken Breasts
8 cup Chicken Broth
1/2 tsp Poultry Seasoning
1 tsp Thyme
1 1/2 tsp Herbes de Provence
Heat 1 Tbsp Olive oil over high heat. Add following ingredients and saute approx. 5 minutes.
1 cup Onion, chopped
1-2 cups Carrots, chopped (we like a lot!)
1/2 cup Celery
1 tsp Ground Pepper

1/2 cup Milk, nonfat (optional)


  1. Rinse wild rice. Place rice through mirepoix in slow cooker.

  2. Cover and cook on HIGH for 4 hours.

  3. Remove chicken and shred it. Return to slow cooker. Add 2-3 cups water, and cook for at least another hour.

  4. Add 1/2 cup milk 15 minutes before serving.
